This full-time position is an integral member of the Ernest's leadership team. This role is responsible for the delivery of customer-focused food services including Ernest's restaurant, special events and school supported clubs and teams. The Executive Chef is responsible for administrating all food production systems and must demonstrate the following abilities: lead, organize, coordinate and review the work of others; develop and implement standards while ensuring uncompromised quality; work at a demanding pace to meet deadlines without sacrificing quality; create effective menus; be a strong team player and leader who actively inspires others; and demonstrate a strong attention to detail.
Key Responsibilities:
Day-to-day leadership and administration of Restaurant and event operations.
Product research, development, and implementation for all operations, ensuring a complementary menu mix, creative and fresh variety, cost effective structure, and timely service.
Establishing food procurement, preparation, presentation, and storage standards within a just-in-time inventory structure and ensuring they are followed.
Daily monitoring and preparation of monthly reports and analysis for food and supply cost statistics.
Leading, training, and scheduling staff within span of control towards a common department vision.
Actively participating in leadership team business meetings and strategy discussions.
Leading by example and ensuring an exceptional and consistent customer experience.
Skills & Abilities:
Strong knowledge of HACCAP and WHMIS Guidelines, Food Safety and Sanitation standards, food preparation and presentations methods (Journeyman/Red Seal), food storage practices.
Strong skills in the areas of computer office software, leadership, organization, written and verbal communication, customer service, critical thinking, and numerical aptitude.
Strong working knowledge of budgeting and financial statistic calculations, back of house and front of house food service operations, ability to assume accurate business projections based on historical data, research into customer and menu trends.
Must be highly flexible and adaptable to varying environments, situations, and individuals. Must be available weekends and evenings. Must display a strong enthusiasm and passion for the food services industry.
Qualifications:
Journeyman and Red Seal certification in Culinary Arts.
Food Handlers Certification.
Additional post-secondary related course work an asset.
Minimum 3 years leadership experience where exemplary service has been a focus, preferably in a hotel, resort or multi-faced restaurant with diverse operations.
Experience working with the Microsoft Suite of products is essential.
Certified Chef de Cuisine (CCC) is an asset but not required.
Equivalencies may be considered.
Applicants with education credentials earned outside of Canada should have their credentials evaluated by World Education Services or the International Qualifications Assessment Service (IQAS).
Remuneration: $61,997.52 - $83,018.52 annually, plus a comprehensive benefits package. (Classification - Executive Chef).
This position is covered by the Alberta Union of Provincial Employees (AUPE) Collective Agreement.
